As more and more guests choose to reserve a table outside in light of COVID-19, they’re going to want a drink to reflect their dining experience.
“The increase in outdoor dining is influencing drink trends,” says Cassie Kane, Senior Director Field Sales Marketing for Monin. “We’ll see a rise in light and refreshing flavors as well as exotic flavors, such as pineapple and passion fruit, which will often be layered in unique but approachable flavor combinations.”
We’ve compiled a group of pineapple-inspired recipes to help you transport your guests to a tropical beach.
Pineapple Palmer
½ oz. Monin® Pineapple Purée
3 oz. lemonade
3 oz. black tea
Fill serving glass full of ice. Pour ingredients into serving glass in order listed. Pour mixture into mixing tin and back into serving glass to mix. Garnish with a mango slice and a pineapple leaf.
Pineapple Cherry Old Fashioned
2 oz. bourbon
½ oz. Monin® Pineapple Purée
1 oz. orange juice
2 dash(es) cherry bitters
Fill a serving glass full of ice. Pour ingredients into mixing glass with 2/3 ice in order listed. Stir vigorously to chill, and strain into serving glass with ice. Garnish with a cherry, orange peel, and pineapple
Pineapple Margarita
1 ¼ oz. reposado tequila
¾ oz. orange liqueur
½ oz. Monin Pineapple Purée
½ oz. fresh lime juice
3 oz. margarita mix
Fill serving glass full of ice. Pour ingredients into mixing tin in order listed. Add ice from serving glass. Cap, shake and pour back into serving glass. Garnish with pineapple wedge.
Classic Pineapple Whip
2 oz. Monin® Pineapple Purée
4 tbsp. (1 scoop) Monin®Cream (Plain) Natural Frappe Base
3 oz. Milk
Fill serving glass full of ice. Pour ingredients into blender cup in order listed. Add ice from serving glass, cap, and blend until smooth. Pour back into serving glass, add garnish and serve. Garnish with ½ oz. Monin® Pineapple Purée drizzle and whipped cream.
Pineapple Whipped Cream
2 cups heavy whipping cream
¼ cup powdered sugar
½ cup Monin® Pineapple Purée
Combine the heavy cream and sugar in the bowl of a stand mixer fitted with the whisk attachment and turn on medium speed. Once the cream thickens and begins to stand up, slowly drizzle in the pineapple purée until it is fully incorporated. Serve immediately or cover and refrigerate until use.
