0.75 oz Fresh Lemon Juice
0.75 oz *Strawberry Syrup
1 egg or 0.75 oz Aquafaba

1/2 cup fresh strawberries, halved
1 cup superfine sugar
1/2 cup water

Directions:
For the strawberry syrup, add strawberries to large mixing bowl, followed by sugar, and muddle to smash berries and incorporate sugar. Let macerate 30 minutes, then add warm (not boiling) water and stir until sugar is dissolved. Strain mixture through a chinois, and fortify with vodka. Alternatively, the .75 ounce of strawberry syrup can be replaced with .75 ounce of simple syrup and 1 strawberry, halved and muddled directly in the shaker.

For the cocktail, shake with no ice, then shake with ice, pour into a collins glass, top with seltzer, garnish with a conversation heart + Peychaud’s bitters.
