Today, founder and 11th generation tequila maker Juan Dobel proudly announces the limited-edition release of Maestro Dobel Pavito, the world’s first pechuga tequila.
Maestro Dobel Pavito draws inspiration from centuries-old, ancestral Mexican agave techniques and traditions, which were used to create a liquid reserved for the most special occasions and celebrations. Featuring traditional, seasonal Mexican fruits and spices, Pavito also uses ‘pechuga’ – or turkey breast – to both enhance and elevate the tequila. The result is a smooth, yet complex final product with layers of rich, savory notes.

Handcrafted in the lowlands of Jalisco, Mexico, using 100% Blue Weber Agaves expertly grown and sourced from a single family-owned estate, Pavito begins with a base of Maestro Dobel’s Silver tequila double distilled in copper pot stills – achieving the smoothness that Dobel tequilas are known for. After a brief period macerating the fruits and spices, a third distillation is performed – a first for the Maestro Dobel portfolio – during which the pechuga is placed at the top of the still, and infuses the tequila vapors with the aromatics of the fruits, spices and savory turkey breast. This intensifies the tequila, creating layers of complexity in the resulting liquid. Shining through are notes of cooked agave, fruits and spices, while also achieving a rich, savory profile.
“Taking inspiration from and adapting ancestral methods by using the aromatic process of infusing the savory notes from a turkey breast in tequila, is not only a first for us, but also for the category.” said Alex Coronado, Maestro Tequilero and Head of Production at Maestro Dobel. “Unlike Mezcal, which is normally double distilled, the triple distillation results in a smooth, yet complex and balanced spirit that is not overpowered by the smoky notes.”
Maestro Dobel Pavito is best sipped neat, on the rocks or with sparkling water and a splash of pineapple juice, all garnished with fresh pineapple – the acidity of the pineapple brightening the fruity notes mid-palate, and complimenting the notes of anise to finish.

Sight: Clear, bright, light-bodied, silvery undertones.
Aroma: Floral, citric. Fresh notes of mint, peppermint, chlorophyll, lemon tea and anise, cooked
pineapple and plum, tejocote (Mexican hawthorn). Very subtle smoky notes.
Palate: Cooked-agave, sugar cane, fruits, spices (Cinnamon, pepper), tejocote.
