Mother’s Jubilee

LA-based bartender Cari Hah has launched her exclusive cocktail as part of Knappogue Castle’s Single Malt Irish Whiskey’s Women in Whiskey series. Cari’s Mother’s Jubilee
combines Knappogue Castle’s 14 Year expression with jujube, lemon juice and persimmon to create a delicious health tonic in a glass. It joins recipes from some of the nation’s best female bartenders including Ezra Star in Boston, Eryn Reece in NYC, and Marienna
Mercer in Las Vegas who have each created recipes for the series. Cari’s Korean-inspired offering combines Knappogue Castle’s 14 Year with jujube, lemon juice and persimmon to create a rich health tonic in a glass.

Ingredients:mother's jubilee Knappogue Castle
2 oz Knappogue Castle 14 Year Single Malt Irish Whiskey
3/4 oz Lemon juice
1/2oz Heavy jujube (dried Korean dates) infused honey*
2 pieces Muddled persimmon
3 dash Miracle Mile Persimmon Bitters

Directions:

For the jujube-infused honey, take 10-12 pitted and chopped up dried jujubes and combine in a small saucepan with one 8oz bottle of honey, bring to a light simmer and add 2oz water to make the honey slightly loose. pour back into a jar to save for use (do not strain the jujubes in the honey). Makes 8 ounces.

For the cocktail, shake and double strain into a double rocks glass. Garnish with a slice of persimmon dusted with freshly grated cinnamon.
