Origins: This apple-based brandy hails from the French region of Lower Normandy and dates back 500 years to the first known Norman distillation in 1554.

The Land: Calvados is produced across three appellations: Calvados Pays d’Auge Controllee, Appellation Calvados Controlee, Appellation Calvados Domfrontais Controlle.

Production: Production starts with apples and pears harvested during autumn first pressed into juice and fermented, then passed through a still and finally, placed to age in oak barrels.

Aging: Calvados aging spans from 2 years (Fine or V.S), 3 years (Vieux or Reserve), 4 years (V.O or V.S.O.P) or 6 years (Extra, X.O or Très Vieux).

Enjoyment: This fine spirit is traditionally enjoyed as an after dinner drink (digestif), is very mixable faring well in a wide variety of Calvados based craft cocktails and serves a delightful spirit to cook with.
