Ambergris has been used in food, perfumes, and punches because of its interesting aroma. “It really is a compelling smell,” said Derek Brown, author of the article. “It’s no wonder why it has been part of perfumery.”
Ambergris is very comparable to truffles in terms of presentation; shaved on top of the cocktail. However, ambergris pound for pound is more expensive.
