Innovations in Ice

According to The Atlantic, mixologist Michel Dozois has become an incredibly successful entrepreneur and bartender by watching ice melt. His company, Neve Luxury Ice, run out of Los Angeles, specializes in making “ice rocks,” which are single large cubes that take up about half of the glass.

The idea behind the ice rock came from Dozois’s discovery that a drink with one large ice cube to keep it cold will taste better than a drink with several small ice cubes that eventually melt and dilute the drink. He also believes that the lack of dilution will result in more profit for bars.

“If your body can take this much fluid, “explains Dozois, “how much of that do you want to be water? If it dilutes less, it will take you less time to drink what’s in the glass, and the bar will make more sales.”

Dozois has four different products that come from the ice, since different cocktails have different needs. He also has different ice shapes that accommodate different glasses, such as Old Fashioned and Tom Collins. The unique product has made quite a splash in the Los Angeles cocktail community. They’ve made cameos on Mad Men, are sold at area wine and spirits shops, and are used by some of the city’s nicest lounges.
